I purchase organic buckwheat from a local farmer and roast it one small batch at a time. In a pan over gas flame. Easy as that.
Sobacha is made from roasted buckwheat grains which can be steeped hot or cold. Most teas sold as sobacha on the market are made from the roasted leftovers of industrial buckwheat agriculture. But not this one. It tastes rather sweet, with light caramelized aromas and delicacy in the flavor.
Buckwheat doesn't contain any caffeine, so drink your heart away!
Mostly drank cold in Japan during the summer, but also makes a very comforting hot beverage in the winter.
