(Limited) Gyokuro 2021
A special version of Yoshida-san's 2021 Uji Hikari gyokuro.
In the spring of 2022, I had access to a research freezer (sitting pretty at -80°C). I took the opportunity to flash freeze some of Yoshida san's gyokuro which was, at that moment, in its umami peak. A little over a year later, I'm taking it out of the freezer and releasing it on the market. Results are very interesting. The umami is still there but much rounder, less focused. Intense notes of chlorophyll have also subdued and revealed something smoother like dashi (broth).
I've only got 200g of that bomb, split into 25g bags.
